1. Is it better to use corn oil or peanut oil? Answer: Both are ok, but some people are allergic to peanut oil, so corn oil is better. 2. Invert syrup? Answer: Inverted syrup can be boiled by yourself, or you can buy it according to my other recipes, but different brands have different consistency, and the results are also different. Common moon cakes that do not color or return oil are related to invert syrup. The amount of powder I give depends mainly on the viscosity of the inverted syrup. If it is thick, use the minimum powder amount I gave 200g, if the invert syrup is thin, use 210g to adjust.

3. Liquid soap: You can buy finished liquid soap directly, or you can blend it, soda noodles (sodium carbonate) can be dissolved in water at a ratio of 1:3 as needed. Try to buy liquid soap from the current year.

4. How to extrude clear patterns? Answer: First, clean the mold in advance. Do not touch water before using. After the moon cake ball is lightly patted on the powder, use the mold to gently press out the pattern. The force is enough to make the pattern clear. Excessive force is the first to make the moon cake flash. It is not easy to demould. I usually do everything well and put it back in the oven that cannot be opened to prevent it from drying out. When everything is done, bake together. Be sure to watch it when you bake, so as not to mess around and over-color the mooncakes.

Let’s talk about how I bake it, learn from it, learn and use it. Today I have one oven with three plates, and the oven is preheated to 220 degrees. After the temperature is reached, let the moon cake embryos be put in. Some people may ask how to use such a high temperature. Mooncakes are originally suitable for high temperatures and are quickly shaped, because they need to be put in one plate and the door will open for a long time, so the temperature will drop. I set a higher value to compensate for the loss. Temperature, so that the temperature in the furnace will rise quickly, so that the mooncakes will not sag and deform.

After baking for 5 minutes, take out and brush the egg liquid. The egg liquid can be diluted with water. Be sure to brush less and only brush the raised patterns. If the brush absorbs a lot of egg liquid, gently pinch it with your hand to keep the brush Just brush the mooncakes thinly with a certain humidity, rather than too much.

Then continue to put the mooncakes back into the oven. If you find that the corners are not evenly colored, adjust them in time and reverse the direction. The upper and lower plates can also be interchanged. The upper right corner of my furnace is currently the fourth plate with a better color.

After 7 minutes of baking, the mooncakes are clearly colored again.

Bake it to the color you are satisfied with. Personally, I don't like dark colors. I like to paint on my own after returning the oil. It is very natural and shiny.
